Broccoli Pie with Bran Crust   *New

I recreated this from a recipe from a missionary lady we knew in Brazil.  You may have to adjust the amounts for the crust since I did not use measuring cups and I am mostly guessing.  :)

Crust:

- 1 C flour
- 1 C wheat flour
- 1/4 C crushed cereal bran
- 1 tsp baking powder
- 1/4 C (more if needed) sour cream (I used fat free)
- 1/4 C or less of milk (pour a little at a time until dough get right consistency)

Mix dry ingredients first, than add the rest, forming a nice dough.
Coat a pie pan or 8x8 pan with oil.  Conform dough to the pan (push it in, using extra flour on top if too sticky).  If your dough is dry enough, you can roll it out.

Filling:

- 1 1/2 C  leftover potato salad OR cubed cooked potatoes
- 1/2 C alfredo sauce
- 1 C chopped broccoli
- 1/2 C shredded mozarella

Mix together and place in pie crust.  Layer thick sliced tomatoes (about 2 large) on top and sprinkle with Italian seasoning.
Bake at 350 for 30 minutes or until crust is done.

NOTE:  I pre-baked the crust a little the first time but it became too hard and the broccoli was a bit crispy.  If you want to pre-bake, I suggest you steam the broccoli first, and make the cook time about 15 minutes.

 

Slow Cooker Kielbalsa and Potato Soup

(Cook 3-4 hours on high or 6-7 hours on low ) 

  Add to your slow cooker:
  - 4-5 red potatoes, cubed
  - 1 chopped onion
  - 1 chopped stalk celery
  -1/2 C beef broth
  - 1/2 C chicken broth
  - 1 C water
  - 1 lb or so, kielbalsa sausage, cut into 1/2 inch pieces
  - 1 can cream of chicken soup
salt and pepper to taste

 For the last 1 1/2 hours of cooking, add 2 C milk and flour to thicken  (add about 2-3 Tbs flour to about 1/4 C water, or less.  Stir well, and then add to the slow cooker, stirring until well blended). 


Slow Cooker Pepper Steak

(Cook for 5-6 hours on low)

-2 lbs London broil
-1/4 C soy sauce
-1 tsp garlic powder, or 2 cloves fresh, minced
-1/4 tsp grd ginger

Add to cooker, on low for 5 hours.

-1 C chopped onion (or thinly sliced)
-1 grn pepper, thinly sliced (add other peppers if you'd like)
-1 can diced tomatoes

Add to cooker and cook for another 30-45 min.  This is up to how "crunchy" you like your veggies to be.

Serve over rice. 


Apricot Stuffed Chicken Breasts

6 boneless chicken breasts

2/3 C chopped dried apricots
3 T finely chopped onions
2 T finely chopped almonds
1 T parsley
Combine and place 1 1/2 T mixture into each flattened chicken breast.  Fold tightly and secure with toothpicks.  Place skin side up on foil-lined sheet pan.  Bake, uncovered for 30-40 min. 

Topping:
1 C sour cream
2/3 C apricot preserves
1/4 C Dijon mustard
Mix and spread over chicken (about 2 1/1 T on each).  Broil for 2-3 minutes.  Enjoy!

 

Freeport Chili

1 lg can kidney beans
2 lg cans tomatoes
2 cans stewed tomatoes
1 lg onion, chopped
2 cloves chopped garlic
1 pkg onion soup mix
1 T sugar
2 lbs grd beef
6 T chili powder
2 T salt (or to taste)
6 hot peppers OR season to taste with cayenne pepper (optional for those less daring!)

Cook ground beef, onion, and garlic.  Combine all other ingredients in a large pot, or crockpot, and simmer for 4 hours.  Serve warm.   Toasted garlic bread and baby carrots would make  wonderful companions to this.


Bar-B-Q Turkey

Leftover turkey, shredded
Bar-B-Q sauce (to taste, but enough to coat all turkey pieces)

Place in crockpot and simmer on low for 4-5 hours.  Serve with hamburger buns.  Quite yummy!

 

Open Face Broiled Sandwiches

~6" or 12" wheat rolls
~sliced cheese (whatever you have on hand or your favorite)
~deli meat (ditto, but I'd advise against salami or that kind for nutrition purposes)
~sliced tomato, onion, olives, sweet peppers, mushrooms (you pick and choose)
~Italian seasoning

Slice roll in half (deli style), but do not cut all the way thru (leave a "hinge" so to speak) and place on cookie sheet.  I spread a thin layer of Smart Balance Mayo but you don't have to add any mayo if you don't want to.  But it does give it an added flavor. 

Layer cheese on one side of the roll slice and the meat on the other side.  Alternating sides, place onions, tomatoes, olives, whatever you would like on top.  Sprinkle with Italian seasoning to taste.  Place cookie sheet on middle rack in the oven, set on Hi Broil for 7 minutes.  Keep an eye on it since ovens vary.  Once done, close the sandwich up and slice.  Very yummy and healthy!  And easy!
